Description

This recipe recreates a coffee shop brown sugar shaken espresso with an iced cinnamon foam cap at home. It’s a simple, sweet, spicy, and creamy iced coffee perfect for busy mornings or an afternoon pick-me-up.


Ingredients

  • 2 espresso shots (about 60 ml total)
  • 12 Tbsp brown sugar syrup (1530 ml)
  • 0.5 cup cold milk (120 ml)
  • 1 cup ice (approx. 150g)
  • 0.25 tsp ground cinnamon

Instructions

  1. Brew Espresso: Brew two shots of espresso (about 2 ounces (60 ml) total). If you don’t have an espresso machine, use 4 ounces (120 ml) of very strong brewed coffee.
  2. Shake Espresso: Combine hot espresso and 1-2 tablespoons (15-30 ml) of brown sugar syrup in a heat-proof jar or shaker. Seal tightly and shake vigorously for 15-20 seconds until frothy. If your sugar doesn’t dissolve, shake for a few extra seconds while it’s still hot.
  3. Add Ice: Fill a tall glass with about 1 cup of ice. Pour the shaken espresso mixture over the ice.
  4. Froth Milk: In a separate jar or frother, froth about 0.5 cup (120 ml) of very cold milk until it forms a creamy, light foam. (For quick foam, use a milk frother, French press, or tightly sealed jar and shake vigorously for 30 seconds!)
  5. Layer Foam: Gently pour the frothed milk over the espresso, allowing the foam to layer on top.
  6. Cinnamon Finish: Sprinkle generously with ground cinnamon for that iconic iced cinnamon foam cap.

Notes

Use instant espresso powder for speed. Prepare brown sugar syrup ahead for quick meals. For a lighter drink, use skim milk or a plant-based alternative like unsweetened almond milk to reduce calories. Ensure your milk is very cold and has enough fat (whole milk froths best, but oat and almond milk also work well) for best foam. If espresso is too bitter, add a pinch more brown sugar syrup to balance the flavor.
