  • Black pepper, as needed
  • Salt, as needed

  • 4 large shallots
  • 1 large white onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 whole scotch bonnet pepper, (remove for less heat or omit for milder dish)
  • 400 g canned diced tomatoes, undrained
  • 2 tablespoons seedless tamarind paste
  • 1.5 cups vegetable stock, (low-sodium broth option)
  • 1 tablespoon packed brown sugar
  • 0.25 cup chopped fresh cilantro

Instructions

  1. Marinate Fish: Clean, dry, and score the fish. In a bowl, mix lime juice and zest, half of the grated ginger and minced garlic, thyme, allspice, paprika, black pepper, and salt. Rub this marinade well into the fish and chill for 30 minutes to 2 hours to enhance flavor.
