Ingredients
- 1 block (5.2 oz) Boursin cheese (Garlic and Fine Herbs)
- 12 oz short pasta (penne, fusilli, or rotini)
- 1 cup (150g) frozen peas
- 0.25 cup (10g) fresh herbs (parsley, basil, or dill), chopped
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- 1 cup reserved pasta water
Instructions
- Cook Pasta: Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to package directions until it feels al dente, tender with a slight bite. Don’t forget to reserve about 1 cup (240ml) of starchy pasta water before draining.
- Build Sauce Base: While the pasta cooks, heat 1 tablespoon of olive oil in a large (10-inch) skillet over medium heat until shimmering. Add the minced garlic and sauté for 1 minute until fragrant and lightly golden; (if garlic starts to brown, reduce heat immediately to prevent bitterness.)
- Melt Boursin: Reduce heat to low. Add the entire block of Boursin cheese to the skillet and let it gently melt, stirring occasionally with a spatula. It will become a wonderfully fragrant, creamy base for your boursin cheese pasta.
- Combine and Finish: Add the cooked, drained pasta, frozen peas, and a splash of reserved pasta water (start with 0.5 cup / 120ml) to the skillet. Stir well, allowing the Boursin to coat the pasta and the peas to warm through, turning bright green. Add more pasta water as needed, a tablespoon at a time, to reach your desired creamy consistency. Stir in your fresh chopped herbs just before serving. Taste and adjust seasoning with salt and pepper if needed.
