Description

This boursin cheese pasta with emerald pea and herb speckles is an indulgent yet quick and easy weeknight family dinner. It transforms simple ingredients into a creamy, aromatic delight with vibrant colors and satisfying flavors.

Ingredients

  • 1 block (5.2 oz) Boursin cheese (Garlic and Fine Herbs)
  • 12 oz short pasta (penne, fusilli, or rotini)
  • 1 cup (150g) frozen peas
  • 0.25 cup (10g) fresh herbs (parsley, basil, or dill), chopped
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 cup reserved pasta water

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to package directions until it feels al dente, tender with a slight bite. Don’t forget to reserve about 1 cup (240ml) of starchy pasta water before draining.
  2. Build Sauce Base: While the pasta cooks, heat 1 tablespoon of olive oil in a large (10-inch) skillet over medium heat until shimmering. Add the minced garlic and sauté for 1 minute until fragrant and lightly golden; (if garlic starts to brown, reduce heat immediately to prevent bitterness.)
  3. Melt Boursin: Reduce heat to low. Add the entire block of Boursin cheese to the skillet and let it gently melt, stirring occasionally with a spatula. It will become a wonderfully fragrant, creamy base for your boursin cheese pasta.
  4. Combine and Finish: Add the cooked, drained pasta, frozen peas, and a splash of reserved pasta water (start with 0.5 cup / 120ml) to the skillet. Stir well, allowing the Boursin to coat the pasta and the peas to warm through, turning bright green. Add more pasta water as needed, a tablespoon at a time, to reach your desired creamy consistency. Stir in your fresh chopped herbs just before serving. Taste and adjust seasoning with salt and pepper if needed.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Tips: Use whole-grain pasta for extra fiber or a plant-based Boursin and gluten-free pasta for dietary needs. Enhance flavor with fresh lemon juice or red pepper flakes.
