Description

These loaded fries combine the best of both worlds: crispy, golden fries topped with a juicy, seasoned smash burger, melted cheddar, tangy pickles, and a creamy garlic aioli. It’s a flavor explosion in every bite!


Ingredients

  • 500g (1 lb) Russet Potatoes: Cut into ½-inch sticks for optimal crispness.
  • 30ml (2 Tbsp) Vegetable Oil: For tossing fries before cooking.
  • 1 tsp (5g) Kosher Salt: To season the fries.
  • ½ tsp (2g) Black Pepper: Freshly ground for robust flavor.
  • 300g (10 oz) Ground Beef (80% Lean): For the smash burger patties.
  • ½ tsp (2g) Garlic Powder: Adds savory depth to the beef.
  • ½ tsp (2g) Onion Powder: Complements the garlic powder.
  • 100g (3.5 oz) Sharp Cheddar Cheese: Shredded for even melting.
  • 60ml (¼ cup) Mayonnaise: Base for the garlic aioli.
  • 1 Clove Garlic: Minced for the aioli.
  • 1 tsp (5ml) Lemon Juice: Brightens the aioli.
  • ½ tsp (2g) Smoked Paprika: Adds smoky flavor to aioli and garnish.
  • 50g (¼ cup) Dill Pickle Slices: For tangy crunch.
  • 30g (2 Tbsp) Green Onions: Sliced for flavor and color.

Instructions

  1. Prepare Potatoes: Peel and cut potatoes into sticks, soak in ice water for 30 minutes, then dry thoroughly.
  2. Season & Cook Fries: Toss with oil, salt, and pepper; bake at 350°F for 25-30 minutes or fry in batches.
  3. Make Garlic Aioli: Whisk together mayonnaise, garlic, lemon juice, and paprika.
  4. Smash Burger Patties: Form beef into a ball, season, and smash in a hot skillet.
  5. Melt Cheese & Break Patty: Flip patty, add cheese, cover, and break into pieces.
  6. Assemble & Garnish: Mound fries, top with patty, drizzle with aioli, and garnish.

Notes

For extra crispy fries, fry in two stages: first at 350°F for 3-4 minutes, then at a higher temperature for 2 minutes.
