Ingredients
- 1.5 lbs ground beef or turkey
- 28 oz can crushed tomatoes (794 g)
- 14.5 oz can diced tomatoes (411 g)
- 15 oz can kidney beans (425 g), rinsed and drained
- 15 oz can pinto beans (425 g), rinsed and drained
- 1 large onion (approx. 200 g), finely diced
- 4 cloves garlic, minced
- 3 tbsp chili powder (45 g)
- 2 tbsp cumin (30 g)
- 1 tbsp smoked paprika (15 g)
- 2–3 tbsp Brick-Red Chipotle Oil (30–45 ml), to taste
- 1–2 cups water or broth (240–480 ml)
- Salt, to taste
- Black pepper, to taste
Instructions
- Prep Ingredients: Dice the onion, mince the garlic cloves, and gather all remaining ingredients.
- Brown Meat: In a large, heavy-bottomed pot or Dutch oven, brown the ground beef or turkey over medium-high heat until no pink remains. Drain any excess fat.
- Saute Aromatics: Add the diced onion and minced garlic to the pot. Cook until the onion softens and becomes translucent, releasing a sweet, fragrant aroma.
- Build Flavor: Stir in the chili powder, cumin, and smoked paprika. Cook for just 1 minute, stirring constantly, until the spices are wonderfully fragrant and blooming (splash in a tablespoon of water or broth if they start to stick).
- Simmer Chili: Add the crushed tomatoes, diced tomatoes, rinsed beans, and 1-2 cups of water or broth to reach your desired consistency. Bring it to a boil, then reduce the heat to low and simmer, covered, for at least 45 minutes, or up to 2 hours for a truly deep, rich flavor. Stir occasionally to prevent sticking.
- Finish with Chipotle Oil: In the final 5 minutes of cooking, stir in the Brick-Red Chipotle Oil. Taste and adjust seasonings as needed.
