  • 1 tablespoon all-purpose flour, for cheese mixture
  • 0.25 cup honey, plus extra for garnish
  • 12 tablespoons hot water, for glaze
  • 2 tablespoons fresh cilantro, chopped, for garnish

Instructions

  1. Prep Oven and Pan: Preheat oven to 400°F (200°C). Grease a standard 12-cup muffin tin.
  2. Combine Dry Ingredients: Whisk together all-purpose flour, cornmeal, sugar, baking powder, and salt in a large bowl.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk the room temperature egg, whole milk, and melted butter until smooth.
  4. Mix Batter: Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined; do not overmix.
  5. Prepare Cheese Mixture: Toss the diced jalapeño and shredded cheddar cheese with 1 tablespoon of all-purpose flour in a small bowl.
  6. Layer Batter: Spoon one-third of the plain batter into each muffin cup. Distribute half of the jalapeño-cheddar mixture evenly over the batter, then add another third of the plain batter, followed by the remaining jalapeño-cheddar mixture. Finish with the last third of the batter.
