Ingredients

  • 240g (2 cups) ripe bananas, mashed
  • 120g (1 cup) rolled oats
  • 120g (1 cup) all-purpose flour
  • 120ml (1/2 cup) honey
  • 2 tsp (10ml) baking powder
  • 1 tsp (5ml) baking soda
  • 1/2 tsp (2.5ml) salt
  • 1 tsp (5ml) ground cinnamon
  • 120ml (1/2 cup) milk
  • 60ml (1/4 cup) vegetable oil
  • 1 tsp (5ml) vanilla extract
  • 120g (4oz) cream cheese, softened
  • 30ml (2 Tbsp) honey (for swirl)
  • 1 tsp (5ml) lemon zest
  • 40g (1/3 cup) rolled oats (topping)
  • 20g (2 Tbsp) brown sugar (topping)
  • 15g (1 Tbsp) melted butter (topping)

Instructions

  1. Preheat & Prepare: Preheat oven to 190°C (375°F) and line a muffin tin.
  2. Toast Topping: Combine topping ingredients and bake for 5-7 minutes.
  3. Combine Dry: Whisk together flour, oats, baking powder, baking soda, salt, and cinnamon.
  4. Combine Wet: Mix mashed bananas, honey, milk, oil, and vanilla.
  5. Combine Mixtures: Gently combine wet and dry ingredients.
  6. Make Swirl: Beat cream cheese, honey, lemon zest, and salt.
  7. Assemble Muffins: Fill muffin cups, add swirl, and gently swirl.
  8. Add Topping: Sprinkle with toasted oat crumble.
  9. Bake: Bake for 18-22 minutes, until golden brown.
  10. Cool: Cool in tin for 5 minutes, then transfer to rack.

Notes

For a more nutritious muffin, substitute some all-purpose flour with whole wheat flour. Using very ripe bananas enhances sweetness and moisture.
