Description

This recipe creates a rich and aromatic cinnamon sugar apple filling, perfect for turnovers or other pastries. It’s an easy-to-follow, quick recipe that yields tender, flavorful apples with a syrupy sauce.

Ingredients

  • 45 medium apples (about 450-550g), firm, sweet-tart varieties like Granny Smith, Honeycrisp, or Fuji
  • 2 tablespoons (28g) unsalted butter
  • 0.5 cup (100g) brown sugar
  • 0.25 cup (50g) granulated sugar
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoon nutmeg
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (8g) cornstarch
  • 2 tablespoons (30ml) cold water

Instructions

  1. Prep The Apples: Peel, core, and dice the apples into 0.5-inch pieces to ensure even cooking and easy pastry filling.
  2. Sauté Apples: Melt butter in a large 10-inch skillet over medium heat. Add diced apples and cook for 5-7 minutes, stirring occasionally, until slightly softened.
  3. Add Sweetness And Spice: In a small bowl, combine brown sugar, granulated sugar, ground cinnamon, and nutmeg. Sprinkle this mixture over the softened apples. Add lemon juice and stir well to coat.
  4. Thicken The Filling: Continue cooking for 5-8 minutes, stirring frequently, until apples are tender and the sugar has dissolved into a syrup. Whisk cornstarch with cold water in a separate small bowl to create a slurry. Pour slurry into the apple mixture, stirring constantly. Cook for 1-2 minutes until the filling visibly thickens.
  5. Cool Completely: Remove the skillet from heat and transfer the filling to a bowl or shallow dish. Let it cool completely to room temperature before using in turnovers or other pastries to prevent soggy pastry and ease handling.

Notes

For best results, use firm, sweet-tart apples and allow the filling to cool completely before using in pastries to prevent sogginess. You can substitute all-purpose flour or arrowroot powder for cornstarch, or apple cider vinegar for lemon juice.
