Ingredients
- 2 cups tightly packed fresh apple peelings (washed)
- 2 cups water
- 0.75 cup raw sugar or light brown sugar
- 1 cinnamon stick (or 0.5 tsp ground cinnamon)
- 2 thin slices fresh ginger (optional, but adds warmth)
- 1 tsp lemon juice
- Pinch of salt
Instructions
- Simmer the base: In a medium saucepan, combine the apple peelings, water, sugar, cinnamon stick, ginger, and salt. Bring to a boil over medium-high heat.
- Reduce and infuse: Lower the heat and simmer for 30–35 minutes until reduced by half.
- Strain like a pro: Remove from heat and strain through a fine mesh sieve or cheesecloth. Press solids to extract flavor, then discard.
- Balance it out: Stir in the lemon juice while warm.
- Cool and store: Let cool, then pour into a sterilized jar. Store in the fridge for up to two weeks.
