Description
This easy, family-friendly apple fritter bread combines all the deliciousness of an apple fritter—tender cake, juicy apples, and a dreamy cinnamon glaze—into one simple-to-make loaf. It’s perfect for busy mornings or a comforting dessert.
Ingredients
- 2 cups all-purpose flour (240g)
- 0.75 cup granulated sugar (150g)
- 2 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 2 large eggs
- 0.5 cup milk (120ml), whole or dairy-free alternative
- 0.5 cup vegetable oil or melted unsalted butter (120ml)
- 1 tsp vanilla extract
- 2 medium apples (~2 cups diced), such as Honeycrisp or Granny Smith
- 1.5 tsp ground cinnamon
- 1 cup powdered sugar (120g)
- 2–3 tablespoons milk, for glaze
Instructions
- Prep Your Pan: Preheat oven to 350°F (175°C). Thoroughly grease and flour a 9×5 inch loaf pan.
- Mix Dry Ingredients: In a large bowl, whisk together 2 cups all-purpose flour, 0.75 cup granulated sugar, 2 tsp baking powder, 0.5 tsp baking soda, and 0.5 tsp salt until well combined.
- Whisk Wet Ingredients: In a separate medium bowl, whisk 2 large eggs, 0.5 cup milk, 0.5 cup vegetable oil, and 1 tsp vanilla extract until smooth and blended.
- Combine Wet and Dry: Pour the wet mixture into the dry ingredients. Stir gently with a spoon or spatula until just combined; do not overmix for tender bread.
- Fold in Apples: Gently fold in 2 cups diced apple chunks and 1 tsp ground cinnamon. You may toss apples with a tiny bit of flour first to prevent sinking.
- Bake the Bread: Pour the batter into your prepared loaf pan. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean and the top is golden brown. If the top browns too quickly, loosely tent with foil for the last 10-15 minutes of baking.
- Make the Glaze: While the bread cools for 10 minutes in the pan, whisk 1 cup powdered sugar, 2-3 tablespoons milk, and 0.5 tsp ground cinnamon in a small bowl until smooth. Adjust milk as needed for a pourable consistency.
- Glaze and Serve: Once the bread has cooled completely on a wire rack, drizzle the smooth cinnamon glaze generously over the top. Slice and enjoy.
Notes
For best flavor, use organic ingredients; try Honeycrisp or Granny Smith apples. To prevent apples from sinking, toss them with a little flour before folding into the batter. If the bread browns too quickly during baking, tent it loosely with foil. Store cooled bread in an airtight container at room temperature.
