A modern take on classic African peanut soup featuring chicken and sweet potatoes. The rich, savory broth is finished with a bright and fresh Zesty Coconut-Lime Swirl to balance the flavors.
Ingredients
- 2 tbsp neutral cooking oil
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1.1 lbs boneless skinless chicken breast, cubed
- 14 oz sweet potato, peeled and cubed
- 1 large red bell pepper, diced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper (optional)
- 14.5 oz can crushed tomatoes
- 4 cups chicken broth
- 1/2 cup smooth natural peanut butter
- 1/2 cup full-fat coconut cream
- 2 tbsp fresh lime juice
- 1 tsp lime zest, divided
- 1/4 tsp red pepper flakes
- 1/4 cup fresh cilantro, chopped for garnish
- Salt and freshly ground black pepper, to taste
Instructions
- Sauté Aromatics: Heat oil in a large pot over medium heat. Add onion and cook for 5-7 minutes until soft. Stir in garlic and ginger and cook for 1 minute until fragrant.
- Brown Chicken: Add cubed chicken breast to the pot. Cook for 5-7 minutes, stirring occasionally, until lightly browned on all sides.
- Toast Spices: Add sweet potato, bell pepper, cumin, coriander, and cayenne pepper (if using). Cook for 3-4 minutes to toast the spices.
- Simmer Soup Base: Pour in crushed tomatoes and chicken broth. Stir in peanut butter until completely dissolved. Bring the mixture to a gentle simmer.
- Cook Soup: Reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken and sweet potatoes are tender. Season generously with salt and pepper to taste.
- Prepare Swirl: While soup simmers, combine coconut cream, lime juice, half of the lime zest, and red pepper flakes in a small bowl. Whisk until smooth.
- Serve and Garnish: Ladle hot soup into bowls. Drizzle the coconut-lime swirl over each serving and garnish with remaining lime zest and fresh cilantro.
Notes
To achieve desired consistency, add more broth if the soup thickens too much during simmering. For meal prep, store soup in the fridge for 3-4 days or freeze for up to 3 months. Always prepare the Zesty Coconut-Lime Swirl fresh before serving; do not freeze the soup with the swirl already mixed in, as it will separate during thawing.
