Description

Moist and tender 7Up pound cake recipe made with butter, sugar, eggs, and citrus soda. Perfect for family gatherings and celebrations.


Ingredients

  • 1 cup (226 g) unsalted butter
  • 2¾–3 cups (550–600 g) granulated sugar
  • 5–6 large eggs
  • ¾ cup (180 ml) 7Up (not diet)
  • 2 tsp vanilla extract
  • 1–2 tsp lemon zest (optional)
  • 3 cups (360 g) cake flour OR all-purpose flour OR self-rising flour
  • ½–¾ cup sour cream (optional)
  • 4–6 oz cream cheese (optional)
  • 1 box (3.4 oz) vanilla pudding mix (optional)
  • 1 box (15.25 oz) yellow cake mix + pudding mix (shortcut method)
  • Glaze: powdered sugar + 7Up + lemon juice
  • Icing: powdered sugar + softened butter/cream cheese + 7Up

Instructions

  1. Prep the oven and pan: Preheat to 325°F (165°C). Grease and flour a 12–15 cup Bundt/tube pan.
  2. Cream butter and sugar: Beat together for 4–5 minutes until light and fluffy.
  3. Add eggs: Incorporate one at a time, scraping the bowl to ensure full blending.
  4. Mix dry and wet ingredients: Whisk flour with a pinch of salt. Add flour in three parts, alternating with the 7Up, starting and ending with flour. Stir in vanilla and optional zest.
  5. Optional moisture path: Fold in sour cream or cream cheese before adding the final flour.
  6. Bake: Pour into pan, tap to release air bubbles. Bake 75–95 minutes or until a skewer comes out clean, or internal temp reaches 208–210°F (98–99°C).
  7. Cool: Let rest 15 minutes in the pan before turning out onto a rack.
  8. Finish: Apply glaze for a traditional look or icing for a creamier topping.
