Ingredients

- 2.5 cups cake flour, sifted

- 1 cup 7UP, room temperature
- 1 tsp vanilla extract

- 0.5 tsp salt
- 3–4 fresh limes
- 2 cups powdered sugar
Instructions
- Prepare Bundt Pan: Preheat your oven to 325(deg)F (160(deg)C). Generously grease and flour a 10-12 cup bundt pan.
- Cream Butter and Sugar: In a large bowl or stand mixer, cream 1 cup unsalted butter and 2 cups granulated sugar until light and fluffy (about 3-5 minutes). Beat in 4 large eggs one at a time, then mix in 1 cup vegetable oil and 1 tsp vanilla extract.
- Combine Dry and Wet Ingredients: In a separate medium bowl, whisk together 2.5 cups cake flour, 2 tsp baking powder, and 0.5 tsp salt. Gradually add the flour mixture to the wet ingredients, alternating with 1 cup 7UP, beginning and ending with the flour mixture. Mix until just combined (do not overmix).
- Bake the Cake: Pour the batter evenly into the prepared bundt pan. Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
- Cool the Cake: Let the cake cool in the pan on a wire rack for 10 minutes. Then, carefully invert the cake onto the rack to cool completely for at least 1 hour.
- Prepare and Apply Glaze: While the cake cools, whisk together 2 cups powdered sugar, 3-4 tablespoons fresh lime juice (from 2-3 limes), and 1 teaspoon lime zest for the glaze. Adjust juice for desired consistency. Pour the glaze evenly over the completely cooled cake, letting it drip down the sides. Finish with extra lime zest sprinkles.
